I have a couple of friends coming over today to make caramel corn so they have for their grandbabies :) Thought I would share the recipe with you all cuz it's just sooo good!
C*A*R*A*M*E*L C*O*R*N
4-8 quarts popped popcorn
(3/4 filled my roaster pan - I used my turkey roaster pan)
2 cups brown sugar
1 cup Karo corn syrup or store brand
1 cup butter or margarine
1 teaspoon salt
1 teaspoon baking soda
2 teaspoon vanilla
cooking spray
set oven to 250* so you can put your popcorn in to hold warm (must stay warm!) spray a large roasting pan with cooking spray, dump your cooked popcorn in & put in oven to hold warm while you make the topping.
In large saucepan mix brown sugar, butter, corn syrup and salt, medium-high heat. Bring to boil, then let boil for 5 minutes, should not need stirred but I check just in case.
After 5 minutes, remove from heat and add the vanilla and baking soda, stir good cuz it bubbles up.
Get your roasting pan with popcorn out of oven, pour the caramel sauce over and start mixing, I use my spatula (sprayed with cooking spray) and toss it around really really good, scraping sauce from bottom, coating popcorn.
Now set your timer for 45 minutes, put roaster with goodies back in oven, I bring out to stir around about every 10-15 minutes to help any coating that sinks to bottom, usually by time its done I have all the goodies off the bottom and coated the popcorn.
When the 45 minutes are up, dump the coated caramel corn onto parchment lined cookie sheets to cool. I spread it out in a single layer, I used 4 cookie sheets to do this.
After its cooled off I break it up and bag it up.
It's soo crunchy and flavorful it's awesome.
*optional: add nuts when you add the caramel sauce - cashews and peanuts are really good in this!!
